Mostly Green Curry Vegetables with Tofu over Coconut Jasmine Rice
This recipe was a delicious win for me! Not all my kids loved it, but I blame that on their immature palates, right?! Maybe it was the tofu...

Chicago Dog Salad
This was a strange concept to me. Basically, it's a Chicago-style hot dog minus the bun and in a salad form. Most of the family liked it, so overall it was a win.
Sweet, Spicy and Tropical: Crab Salad Lettuce Wraps
We started out the new menu plan with a seafood recipe... the result?... no one really cared for it. We used claw meat instead of lump crab meat due to the incredible price ($15.99 for 8 ounces!). Other than that, the crab salad was really runny. It would've been better on crackers or as a taco maybe. The kids didn't really care for the taste and didn't eat their whole wrap.
On a positive note, it looked pretty! I think if you made it with a white fish instead of crab, it would've been a bigger hit.

Week 6 Menu Plan
We have moved... life is gradually getting back to normal... but really, what is "normal"?? With 3 kids on the move, a psychotic dog named Addy, and a somewhat hormonally imbalanced mom and wife, I'm not quite sure what normal is anymore... At least we have a stable man leading us!
We are excited to get back to cooking and Sophie has created a delicious menu plan. We're starting on a Saturday this time around. Here's the plan!
This is not us... but it IS how we feel when we're cooking in the kitchen together! |
- Saturday - #80 Sweet, Spicy and Tropical: Crab Salad Lettuce Wraps
- Sunday - #110 Chicago Dog Salad (sounds a little interesting...)
- Monday - #41 Mostly Green Curry Veggies and Tofu over Coconut Jasmine Rice
- Tuesday - #20 Black Bean Stoup and Southwestern Monte Cristos
- Wednesday - #15 Super Tuscan Burgers and Potato Salad with Capers and Celery
- Thursday - #33 Three Beans and Some Chicken
- Friday - Pizza Night
Check back for links as we create the meals throughout the week! Pictures are coming!

We're Back!
Dear Readers,
We are truly sorry about such a long wait. Yes, our computer works. We can't catch up in May with meals we finished in February, though. So, we've come up with an alternative. It won't be a whole year of cooking, or not everything being cooked with Rachael Ray's book. In fact, this will be a summer's cooking experience. I just finished school yesterday. I will look forward to cooking again!
~Sophia
P.S. This does NOT mean we are changing the title or anything else like that. Hope to see you soon!

Technical Difficulties...
Our apologies for not posting daily lately. We have had some major computer issues. We've continued to take pictures of the meal we are making every night, and will post them as soon as we can.
Just last night, we made a delicious ring-dinger of a meal! So, stay tuned...

Pasta with Swiss Chard, Bacon, and Lemony Ricotta Cheese
We have been keeping up with our meal-making, but due to technical difficulties, are just now sharing them with the world. We brought the pasta back this week, and this was a welcome addition! We served it with the lemon ricotta on the bottom, and topped the pasta with bits of bacon, onion, garlic, and Swiss chard on top. The cheese melted, and it was delightful!
